Antonia Lofaso's cooking is an invitation to explore the depths of her cooking. Food she cooks up is a result of her interest in the culture of Los Angeles, which was sparked by a trip in Los Angeles from Long Island's suburbs. The belief of the fact that cavatelli and carnitas could coexist in harmony on a single menu conveys a sensibility which continues to evolve. But what remains with her food is an unifying vision of the future while achingly recollecting the previous. Inspired by her Italian-American heritage Lofaso opened Scopa Italian Roots in 2013 which was immediately well received. The restaurant's version of old-school Italian is regarded as among Los Angeles' most compelling Italian restaurant chains. Customers have described Scopa as an indispensable neighbourhood staple, where Lofaso always serves food that is inviting genuine and incredibly satisfying. Lofaso studied from chefs who used sophisticated techniques. However, she didn't hesitate to take extreme chances to honor her intuition. She was in close contact with many stars and quickly rose up the ranks at Wolfgang Puck's Spago. Lofaso, Sal Aurora, and Mario Guddemi partnered to open Black Market Liquor Bar Studio City in 2011. Her home was within Black Market Liquor Bar and her business relationships. The creative spirit of Lofaso would be fostered with this partnership. Black Market does not have a single direction, that's the intention. The first course could be potato chips and peppers some dill. This could be followed by Korean wings and meatballs. Antonia Lofaso, the cook behind this menu filled with mouthwatering and bold flavors is what anchors the whole. Lofaso measured her professional success by her capacity to understand and remain real to her viewers. In the course of her career, both Top Chef Chicago episode and Top Chef: All Stars highlighted her capacity to be herself outside the cooking environment. Since then she's continued to pursue her career in front of cameras, including judge on CNBC's Restaurant Startup Judge and recurring appearances on Food Network's Cutthroat Kitchen Man vs. Child. Lofaso teamed-up together with Penguin Publishing to create The Busy Mom's Cookbook 100 Recipes for Quick, Delicious, Home Cooked Meals. In this book, she also shares her experiences as a mom and student in the French Culinary Institute. Lofaso believes that her success is due to her passion of cooking and she is capable of keeping her finger on the pulse of this industry by focusing on her kitchen.
